I assumed from your photos that the bike was a bit of a wreck... but I'm glad that's not true! So, rather than strip it all down, why not tackle the most obvious repairs, slowly and carefully. Some second thoughts... If you want to preserve the 'patina of age' (always desirable), and the frame is not actually broken, then maybe you can simply work your way through the obvious problem areas, eg wheels, brakes, chain etc. Pedersen 3-speed gears are very desirable, so I hope yours isn't too ...
